Cheap and easy skillet casserole

    Adapted the recipe below from one at Art of Manliness. Made it for lunch in my 12-inch cast iron skillet.

    *12 oz bag of chopped broccoli, thawed & drained
    *3 cups cooked rotisserie chicken, shredded (leftover)
    *1 jar chicken or turkey gravy
    *1 cup mayo
    *1 tbsp lemon juice
    *1/4 tsp salt, if that (the gravy has plenty)
    *½ tsp pepper
    *Spike brand seasoning

    Topping
    2 handfuls of croutons
    2 cups sharp cheddar, grated


    Preheat 350. Dump and mix main ingredients in skillet, then top with croutons, then cheese.

    Bake for 30 or so, until browned and melty.

    It's pretty darn good. Next time I'll add some dried onion and chopped celery, and no salt. Easy enough that even a dope like me can manage it.

    Had a heart test last year, it's fine. I wouldn't eat this every day though.
