Yesterday I made a batch of Green tomatillo salsa. This morning my wife made me Huevos Rancheros. ( a flour tortilla covered with smoked ham diced, diced Mexican potatos, Grilled green onions, Mexican Cojita cheese, cilantro two sunny up eggs all smothered in the tomatillo salsa)
I woke up today and made some beacon and egg breakfast tacos for the family, and I will honestly admit that while I was cooking I was thinking about this breakfast thread! I just knew that you were going to post something amazing! What are the odds....lol.
I think it's time I canned some tomatillo salsa. The pantry is empty and I've got 10lbs of roasted Hatch chilis in the freezer. I go absolutely nuts over tomatillo salsa.
Well, I have in the past, but I haven't been there in a few years. Here in DFW, there are several grocery chains roasting Hatch every September. I usually buy a case every year.
Great combination of ingredients, Lou! My kind of breakfast! I could see my making this exact meal here (except with corn tortillas as we are a gluten-free household)! We grow our own tomatillos, green onion & cilantro, garlic. I love a good salsa verde! ...And a good Chile verde. We'll be making some home-made tamales for the New Year and you've given me inspiration to do a verde filling!
