Interesting and I thought dandelions were nothing more than pesky lawn weeds. Better than I anticipated with a mild bitter after taste lending to a more complex flavour profile.
I have heard of people making tea from Dandelions but never seen the ice cream. I would assume it would be a bitter taste. Was it any good?
Yes surprisingly. Slight bitter after taste which I liked as it balance and added harmony to the sweetness of the ice cream. The Dandelion root is one of the last ingredients used meaning less used in mix.
The old time Italians (at least in the US) would make wine from dandelions. I understand it was quite bitter, but then again, so is/was most of their homemade wine. Paint chips are better than kale. Just sayin'.
Hmm... the homemade stuff is usually dreadful... very bitter and yeasty. Which is why they usually mix it with ginger ale or 7-up.

Dandelion wine is delicious! What I had was made by a Pennsylvania Dutch woman who, in her 90's, would pick, crush and bottle all by herself.
