Took my youngest out for dinner to Rossi's Bar & Grill. Had a Rib eye steak sandwich and a Yuengling draft.
Tonight was quick as I didn't feel like firing up the grill. I think the entire meal took me 15 minutes to prep and cook. Coriander crusted seared tuna steak with a garlic, ginger, soy pan sauce served with a medley of sauteed snap peas, cherry tomatoes, and yellow squash from the garden.
This was actually Sunday leftover/clean out the fridge: Cubed up leftover carne asada, leftover dirty rice, doing a good long simmer in chiles, beef stock and some canned tomatoes w/chiles. Toast up the tortillas nice in the griddle so they don't get soggy. Strain the filling, thicken the sauce, and pour over with a bunch of jack cheese. Americanized Mexican Restaurant food anyone could brag on.
Prior to adjourning to my deck for a well deserved cigar, a small chicken pot pie from the Amish market.
Herself is working OT tonight, so she left a baked ziti to put in the oven when I get home from work.
Just ate a can of Van Kamp's chili with beans topped with shredded cheddar, crumbled Fritos and half a piece of sirloin finely sliced (smuggled it out of Golden Corral last night...beats it going in the trash). It's in the upper 40s and the house ain't warm. Oh man was that good.
A cup of split pea soup. I had a small ham bone in the freezer. Smoked it for an hour with some hickory, then made stock and finally soup while I was working at the house this weekend. Tonight was my 5th and final meal from it.
It did a little bit from the first night to the second day as the flavors seemed to blend a bit and the smokiness mellowed. Not much change after that.
