I hadn't considered the carbon blades until you mentioned it. Very good point as even the DE carbon blades I've used, in most cases, shaved very well without any coating help. Tigers and Flying Eagles not included, of course.

 

True story.... I roomed with a guy that had a macall...beautiful nasty loud bird. I over heated a non stick pan and he came unglued. I did not know it was poison to birds. If I had known I would have cooked more often.

GAWD says use cast iron like your grandmother.

 

That has always been my thing with people that say the coating is what makes a blade usable. I still say coating is mostly marketing....like the escape trunk on a submarine.

 

GAWD is right....I think I have some of my grandmothers cast iron actually.
