Walleye is a mild, firm white fish. Very similar to perch, if you’ve had that, but they get much larger. They also tend to only live in clearer cooler water, so you don’t ever get that “muddy” taste you can get from perch if they’re from smaller, shallower water.
They have speckled perch for sure! Not sure of other species. We call them specks or crappie. They are damn tasty but 3 lbs would be an rather large one so you need a good day out in order to feed more than yourself. They have super fragile mouths so you can't set the hook like with a bass or else you'll tear the hook out.
There’s a reason they call crappie paper mouths! Very easy to over set your hook, and literally rip it out of their mouths.
If you got crappy you got to have bluegill, right? Last time I had bluegill, a driver at the machine shop I worked at brought a bunch in coated in ground up pretzels. Best fish I've ever had.
You are in luck Sir! I've caught more bluegill fishing down there than any other fish, and I guess shellcracker too since they are easily confused. Shellcracker have the little red tab on their ear. Also called Redear Sunfish.

Nothing better then a mess of White Perch..crappie. This part of Louisiana they call them sac-a-lait . Plenty of bluegill too!!
