  4. Tonight I tried something I've never done before. Cornish Game Hens. Shop rite had two packs so I figured 4 would be plenty for the three of us. I found a recipe online that was super simple. Basically just salt and pepper the inside cavity, stick a quarter slice of lemon in the cavity along with a large sprig of fresh rosemary. Salt and pepper the outside, rub it with olive oil, put them in a roasting pan along with as many whole cloves of garlic as you like. Roast for about 25 minutes, then pour some chicken broth, white wine and olive oil over them and continue roasting for another 25 to 35 minutes basting every 10. They came out real nice. The only thing I would do differently is once they were done roasting I would put them under the broiler for a bit just to crisp up the skin a bit. Otherwise it was delicious. And the garlic in the bottom of the pan caramelized in the juices, broth and wine and tasted like candy. I basically used two entire heads of garlic which is about 50% more than the recipe called for. I could have done even more. It was simple to do, no difficult to find ingredients. I cooked up some jasmine rice and some sauteed string beans with more garlic to go with it. Delicious.

  6. Homemade Lasagna. I made four large pans, several months ago, a deep froze three. This was our last pan. Our whole family ate until we were miserable. Best lasagna ever.

Not sure.My job had sandwiches and salads for the staff .We had inspectors from an accreditation agency come in today.So the company sprung for lunch.I'm allergic to lettuce so naturally all the sandwiches had lettuce and the salads were lettuce and mixed greens.When this happens as it does frequently I usually leave my meal for some one else.But after 13 hours working I was not a happy camper and brought home the food for the wife.Eff'em if they were looking for seconds.

    I'll probably just boil some hot dogs and maybe open a can of chili ,a jar of chow chow and a bottle of bourbon.

    I'm having some friends over for dinner... total party of 6. One person's celiac and one is doing a pain-in-the-arse keto diet. I'm lactose intolerant. (Reading this, I now realize that I am out of my ever-loving mind....)

    Anyhow, here's the intended menu:

    Apps:
    mini mozzarella balls
    rice crackers
    assorted cured meats

    Main:
    meatloaf (my internationally famous recipe)*
    garlic mashed potatoes w/ brown gravy
    oven roasted balsamic & honey carrots and green beans

    Dessert:
    individual apple crisps w/ vanilla ice cream

    And of course assorted alcoholic, non-alcoholic, caffeinated beverages.
