I had a bowl of homemade ham, collard, and mixed bean stew for lunch. It was very satisfying and tasty on a cold November day. It has a tomato base, and it was only 179 cals. per 12-ounce serving.
Hungarian Goulash, and French Bread. I've had this cooking since noon. I haven't made it in years, but the cold weather makes it the perfect dish. My two older ones are coming over, to visit, after they heard what has been cooking. They don't fool me.
It really is. We are still learning how to use it, but getting very good results thus far. Tonight we are using it to make pork chops.
I cooked a smoked pork shoulder in the crock pot Christmas Eve overnight with peach presevres, ginger, red pepper. So tonight sliced pork, wheat bread and scalloped potatoes.
This may sound gross but I'm batching and...well... Cottage cheese atop a bed of heated and drained Popeye canned spinach, sprinkled with pepper, Spike seasoning and sesame seeds (yes, whatever was handy). And it wasn't half bad. Dessert: canned unsweetened pumpkin pie filling, heated and mixed with butter and s/f syrup, topped with cinnamon, a handful of Planters mixed nuts and s/f whipped cream. Again...not bad. I think I'd make an efficient hobo.
Christmas Leftovers: Plenty of prime rib, mashed potatoes, Yorkshire pudding & gravy. May have to find something green to go with it all....
