Hi Pam! Yep, Cream o' almost anything always does me right. I should cook up a pot of it soon... maybe brocolli ot

 

cubed chicken breast over a bed of stuffing, topped with cream of chicken soup, baked at 350 for 30 minutes. Deeeeeelicious, though not quite soupy.

 

It's lime popsicle time for this old boy...

The cream o' baked stuffing chicken sounds pretty good Corey! Might have to give that a try. Sounds like something even I couldn't mess up too badly.

It's a nice quick meal that needs little prep. just put a little bit of water in with the stuffing so it doesn't come out too dry. Other wise, put it all together, pop it in the oven, and you're set. One dish cooking at its finest.

Morning everyone... 2.5 more weeks of coursework to BS through and then reflection papers and action plans. I was hoping to get through the coursework this week and have it out of the way by the weekend. However, things are popping up left and right for the rest of the week... But a great shave today and things are looking fine for now.

Woo Hoo.. Week 13 done.. now to plunge into the long arse reading assignment for week 14.... argh!

Ironic isn't it... this is a course on getting students to be better readers in the math/science/social studies classroom, and the reading assignments are the drabbest, worst written, hardest to follow sections that I have had to use in any college/grad level course. They alone have killed my interest in reading and are why I got so far behind in the course. Blah....
