    They're Staub Cocottes. The bigger one is 8.75qt or 9qt depending on which vendors site you're looking at. The smaller is 5.5qt.

    The weight would be something to consider, especially once loaded with food. My wife would struggle getting it in and out of the oven.

    Tonight’s menu - grilled pork chops and grilled zucchini, with Red River Ranch seasoning. Grilled on my double burner grill pan. So juicy and delicious!

    I recently picked up a 12” carbon steel pan at the Lodge outlet in Seveirville, TN. The factory seasoning didn’t work that well, so I seasoned it one time in the oven, and it made a huge difference. We’ve cooked hamburgers in it several times, and they don’t stick now. The real test will be fried eggs over light. Whites must be done but not crispy, and yolks runny. I have one very old cast iron pan that is so slick eggs will slide all over it! We have a 12” cast iron pan, but it’s pretty heavy. My wife is having some hand issues, and my left arm is partly disabled with little strength in that hand, hence the need for the carbon steel 12” pan.

    The 8” Lodge cast iron skillet is just right for eggs and not too heavy.

    Agreed, the old cast iron pan I referenced that is so well seasoned is an 8”. But I still want the 12” carbon steel to be as well seasoned.
