I have a recipe for angel hair/capellini pomodoro that is vegetarian, unless you add cheese to it. I made some modifications to a Tyler Florence recipe. Would you be interested? What is your definition of "vegetarian"? Are any of the following acceptable: Cheese Eggs Milk Anything else?
Angel Hair/Capellini Pomodoro This was originally a Tyler Florence recipe that I found on foodnetwork.com (due credit has been given). First, I'll list his recipe, then I'll describe my modifications. Lastly, I have some pictures from the last time I made this. Pomodoro Sauce Recipe courtesy Tyler Florence Show: Food 911 Episode: Ravioli Done Right--Tampa FL 2 garlic cloves, minced 2 tablespoons onion, diced 2 tablespoons olive oil 2 tomatoes, chopped 3 tablespoons fresh herbs (oregano, basil, parsley), chopped Salt and pepper, to taste Pinch sugar In a saucepan over medium heat, saute garlic and onion in oil for 2 minutes. Add tomatoes and herbs, continue to cook for 5 minutes until the tomatoes soften. Season with salt, pepper and sugar. Serve with cheese and herb ravioli. Episode#: FO1A21 Copyright © 2006 Television Food Network, G.P., All Rights Reserved Modifications: I always use Roma or plum tomatoes, usually 6 or 8. I cut them in quarters the long way, remove the seeds, cut each quarter into 3 long strips, and dice. I suppose this isn't necessary. It's just the way I like to make it. I like onion, so I use an entire onion, diced. I like garlic, so I use maybe 4 LARGE cloves, minced. I only use one herb at a time. Ms. MK-ULTRA loves oregano, so I use that when cooking for both of us. Otherwise, I use basil. I have used fresh and cut it up myself, but lately I have been using dried because I have so much other chopping to do. I don't use salt or sugar. I use pepper from a mill. I cook the onions for a few minutes before adding the garlic because it seems that the onions take longer to cook and I never want to overcook the garlic. I serve over angel hair pasta and sprinkle with grated Parmesan cheese. The last time I made this, I added toasted pine nuts. It was delicious, but that is just my opinion. If I feel industrious, I make Parmesan encrusted chicken and mix it in. This, obviously, is not vegetarian. Here are some pictures from the last time I made this. I believe I only used 4 Roma tomatoes so the tomato to onion ratio is smaller. I had two meals from this.
Mojadara I found this on the Internet(s). I didn't save the URL, so I can't give due credit. I made it only once, but may have used too much turmeric. I did not use yogurt with this. Mojadara 1 cup brown lentils, washed 4 tablespoons olive oil 1 cup long-grain rice, washed 2 teaspoons salt 1/2 teaspoon black pepper 1 tablespoon ground cumin 1/2 teaspoon ground turmeric 1 1/2 cups warm water 4 large onions, sliced Vegetable oil (for deep-frying) Plain yogurt In large saucepan with water, bring lentils to boil. Remove pan from heat and let lentils sit 10 minutes, covered. Transfer to colander; rinse under running water and drain thoroughly. In heavy pan, heat oil. Sauté rice and lentils over medium heat for 2 minutes, until grains are well coated. Add salt, pepper, cumin, turmeric and warm water. Bring to boil over high heat, stirring occasionally. Reduce heat, cover pan tightly, and leave on low heat for 10 minutes. Deep-fry sliced onion in 2 batches in hot oil until caramelized, stirring occasionally and watching carefully so onions don't burn; this will take about half an hour. Serve fried onions as garnish over rice. Serve with yogurt on the side. Makes 4 to 6 servings.
Not to worry, Dave, I too, enjoy a meatless meal 2xs/wk. I only have recipies for main dishes, I leave the salads for da Bunny.
Hummus I know there are thousands of hummus recipes, but this is the only one I have made. It came from a very dear cousin. Hi....making hummus is not a very exact science. I do about: 1 can garbonzo beans (reserve juice) 1/4 cup well stirred tahini 1/4 cup fresh lemon juice (or couple T bottled) 3 tbs good olive oil some garlic (maybe 2 cloves) black and or green olives with pimento 1/2 t salt or leave out (olives are salty enough) I use quisinart.......blend until smooth: beans, tahini, juice, oil, garlic, salt.....if too thick add a little of the bean juice or water until until a consistency you like. Then I take a bunch of black olives (maybe 8) and about 8 or 10 green olives and cut them in half and put in quisinart.....blend only until olives are chopped. Leave olive chunks as big as you like them. I also sprinkle in some parsley for green. Spread in a dish that is a little rounded and make little ridges in the hummus. Sprinkle another tablespoon of olive oil around the top.....sprinkle with paprika. Garnish with parsley or olives.

Nothing is a must but I have never had it with out. Guess you could use soy sauce but then it will be Pa Chi Thai

Rice noodles (soak in water for 10 min) Bean Sprouts Peanuts Peanut oil Eggs To fu Onion Garlic Fish Sauce (Soy Sauce) Lime (little juice and garnish) Combine in Wok and Cook till done (if you do not know how to use a Wok go to a Thai eatery and ask them to make it vegetarian style, watch and learn from the best).
D you know how i feel about this. But here is a soup 2 cups chicken stock one green onion chopped fine sliced mushrooms fine 2 T soy 2 T sherry. Mix the lquid bring to a boil toss in a good hand full of min rice serve then add some onion and mushroom slices.
I am not sure how long I could go vegetarian without Indian food. It is the only cuisine I know of where the flavors substitute for the lack of meat sufficiently so well that even non-vegetarians wouldn't miss the meat. Possibly. Two sites have been really helpful to me for preparing Indian recipes (many but not all of these are vegetarian): Indian Recipes dot org, which has videos on how to cook the recipes, and I Shop Indian dot com.
