I like my eggs best on someone else's plate because I don't like egss. I am told that I make good scrambled eggs by my daughter.
All ways. If I had to pick a favorite though, it would be over easy. This is what my late pal, Richie, used to call a "chin dripper".
Over easy if my Mommy makes them. :love029 Scrambled cheesy (American, not cheddar) or quiche if I make them. Don't start nitpicking at me saying quiche, it's basically a scrambled egg pie. mmmmm......egg salad. :drool
Having been raised in NJ, the way I most enjoy eggs is over-easy, placed within the loving confines of a Kaiser roll on a bed of pork roll and melted american cheese. :drool In dinerese: "Taylor Ham Egg and Cheese on a hard roll."
If I am having pancakes or SOS then over easy and on top. Otherwise I like them with cheese and scrambled. If I am sick then I like them soft boiled with toast.
Breakfast: Fried over easy, or sunny side up with some type of almost burnt toast. Lunch: in a salad stuck between two slices of pumpernickel bread. Dinner: I first saw an egg on a burger in New Zealand in 1999. I've started seeing them in restaurants here over the last couple years. I can't imagine it's healthy, but it sure is delicious. Other: hard boiled, deviled, And of course: Scotched.hard boiled, wrapped in sausage and deep fried) I like eggs.
We must be long lost brothers! These are exactly my preferences. Over easy on top of grits or with corned beef hash too otherwise it's scrambled with cheese on top (any kind will work but pepper jack is preferred). Soft boiled with toast and butter is a favorite from my earliest days of table food. I just never seemed to lose my taste for it.
Rocky style: 6 raw eggs in a glass; swallow I kid, I kid.... Fried is my preference, sometimes I like the yolk runny, sometimes not. Always best when fried in the leftover grease from cooking bacon and/or sausage. Hard boiled would be my second preference.
First choice is basted, but over easy is a close second. If you don't know, basted means you add a little water to the pan and cover so the steam cooks the top of the egg and you don't flip it (yolk left runny).
Most ways except hard boiled. I'll do hard boiled in foods like salads, but can't eat them by themselves. With breakfast I most often do over medium to over easy or scrambled, with a generous splash of Cholula or similar hot sauce. Sometimes I'll do poached, and then there's this oddity:
It must be true - Pepper Jack is my cheese of choice also but if it is not in the house no bid deal I will use whatever. I also like them on my grits but I do not get grits that often anymore. The soft boiled thing came from when I was a kid. My Grandma always made me soft boiled eggs with buttered toast when ever I was sick.
Greg - I've always called those "Gas Lights". My mom made those all the time when I was a kid. As an adult, it seems like extra work that doesn't taste any better than toast and over easy eggs.
Yeah, I never make it at home... I usually cajole my favorite cafe into making it for me :happy102 And it has about a half dozen names... Gas Lights is a new one to me. In V for Vendetta they called it "Eggy in a Basket"
I would have to say my number one choice for eggs would be fried hard with salt and pepper. Usually at least three of them. Unless I am eating them with corned beef hash. Then I scramble the eggs right in with the hash.
