Feeling pretty good for a Monday. Been doing okay on the ol' gluten free diet... only had a couple of slips last week, gonna do better this week. Yesterday, I figured out a way to approximate my much beloved cheap microwave bean burritos that are pretty much the staple of my diet. In fact, I think I can make them cheaper myself, and I know exactly what is in them! Friday night, I dropped a few strawberries and some balsamic vinegar in the blender and made a nice thin sauce, dumped it over a couple of chicken breasts and let it soak in the fridge overnight and all day Saturday. Chopped it up and fried it... good golly that was some amazing eats. Then last night for supper, I revisited my peanutbutter chicken recipe, this time adding a little green bell pepper to the mix. Mmmm Mmmm good! Even got the wife's seal of approval.
The strawberry balsamic chicken sounds yummy, and I'm not a huge fan of chicken. I may just have to try that. What did you fry in? Olive oil?
I got a cheap ceramic coated frying pan from WalMart (it's kind of weird frying on a white surface); With it, you don't have to use oil or anything. It's pretty darned amazing, really. Stuff sticks to the pan a bit sometimes, but it just comes right off with a plastic scouring pad. So yeah, just cooked it in its own juices. It did get pretty watery at first, but I just cooked it until it thickened up and dried mostly. I did pour the marinade on it about halfway through cooking, just to get it a little bit more kick and browning. Worked out awesome! edit: Oh yeah, another thing I forgot to mention!
