I think that my favorite artisans; B and M, Saponificio Varesino, MDC and a few others offer more protection during the shave than what I got out of either of these. I will occasionally get a little feedback from the alum with them and it's usually localized to a small area. My entire face lit up when I used the alum, that hasn't happened in quite a while. Now, to be fair, I'm at the end of this blades use. When I compare the Dr Jon's to the MDC if I don't get any burn from the Dr Jon's I'll revisit it and blame the blade.

It could simply be lactose intolerance.

It is similar to an an adjustable. The blade gap does increase or decrease similar to the Rockwell set up. Karve specs for their plates are below.
