This is SE month and today seeing as I have a little time I thought I'd share how I store my carbon steel blades.

First, water will help rust or oxidize steel,
we have all experienced that. But what happens to the blades that are stored? They do rust or oxidize but at a slower rate. So to stop steel, or anything from oxidizing, remove the oxygen that can get to them. In my experience with dehydrating food stuff, there is a simple and easy solution.
Get a canning jar with a sealed lid, and put a oxigen pack in it. This removes the oxigen and greatly reduces oxidation. I just remove a pack and close the lid when I need another tuck of blades. If the little button on top of the lid goes in, your O2 pack is still good. It takes about an hour for it to respond.
