Meatball Stroganoff W/Portabella Mushrooms White Rice Kind of my take on Beef Stroganoff. A little more time consuming, but the flavor is infused throughout the meatballs. I also do this dish, but instead, use chicken breasts at time. My wife and daughter have been begging for me to cook it. I seasoned and cooked everything, they rolled the meatballs. Family time.
We made a roast chicken tonight. We had basmati & wild rice with it. There is of course, several days worth of leftovers because it was a 7 pound chicken and there are just 2 of us.
I'm not generally a big chicken fan but tonight I had takeout wings. Sweet Thai chili sauce. they were very satisfying.
Fresh picked collard greens from community garden cooked with green onions with the tops, ham bone, a little bacon grease, orange zest, twice boiled dandelion greens, baby poke salad leaves, kale from the garden, a jalapeno, a tater and a turnip diced up.
Tonight Cacio e Pepe! Or as close as I can get it. I know, I know... it's just pasta, but great pasta! Yes, I used gluten free pasta that made it somewhat different to cook and combine. But the wifey loved it. So do I! enjoy tp

Last night it was chili made with Tennessee Pride mild sausage, black and Great Northern beans, and chick peas. I've been rotating between chili, red beans and rice, and dirty rice. Seems odd to me that people in these parts wipe out all the hamburger at the stores, but ignore "breakfast" sausage. I'd rather cook with Tennessee Pride sausage than hamburger any day of the week. Haven't eaten out since March 13th. All of the decent eateries around here opted to close down as of March 17th.
Breakfast, half a bagel and some homemade buttermilk. Lunch, on the stove cooking now, a bowl of beef stew, homemade yogurt with strawberry jam mixed in. Supper, slow cooked roast with some mixed veggies. Some lemonade for drinks. Nice day here. Hope your day is going great! tp
For some reason, I can’t seem to find ketchup lately. But I have plenty of tomato paste, so I found a recipe that uses it. I just made it & it’s pretty easy and tasty. I would modify the spice palette a bit, but we all have our preferences.
That's great! I keep powdered tomatoes around. You can make just about anything you need with it. Tomato past, sauce, ketchup, the list goes on. You got it going on Sara! tp
There have been some odd shortages around here, too. Last time I shopped, April 10th, margarine, of all things, was very hard to find. One store was completely wiped out. What's next...Epsom salt?
We have two full-line grocers here that get cleaned out daily right at opening time by hordes of hoarders. There's also a Save-A-Lot here that has somehow continues to escape their attention. They've managed to stay fully stocked right along, including bathroom tissue and paper towels.
