    But I have tried Cryogen. Don't you remember the catastrophe I had with my first puck and figured how to use the second puck. As far as giving an opinion on things that I never used, I don't have a problem with it if I said that another source said such and such. I will say that I never drove a Mercedes Benz, but I have an opinion on it. It is too damn expensive! Lol! Btw, I understand your point.

    I am not the type to get in front of cameras Blair but for MAYhem I enjoy making those vids to show it can be done safely. My camera setup is a small shelf I sometimes take photos of my setup on. I prop my phone against a bottle og Proraso balm.

    The brisket is in the water bath now. I won't know the final result until Sunday afternoon. I've made some darn good briskets out on the smoker, also my fair share of bad ones. If this comes out as good as the good ones it'll be my go to method. Much less labor and I'll be able to sleep at night instead of tending a fire.
