    Clean fire is the key to great BBQ.

    More fuel means more smoke, even if you can’t see it. The absolute beauty of a stick burner.

    Yup, if you see billows of smoke in the cook, it’ll be like eating out of a dirty ashtray.

    BTW, the ‘salt dry brine only’ ribs didn’t hit the high notes for me. There was a baconesque flavor though.

    I'm out of hickory right now, I need to get off my arse and go get a truck load. When I do have it I even preheat the logs on top of the firebox. When that split goes in the next gets preheated. They take right off that way and really helps to maintain the clean fire.
