    Opossum Sausage

    5 Feet medium hog casings
    4 lb Opossum, trimmed of all fat, cubed
    1 lb Pork fat, cubed
    2 ts Salt
    2 ts White pepper
    1 ts Tabasco sauce
    1 ts Crushed cumin
    1 ts Oregano
    2 ts Sweet paprika

    Prepare casings.
    Mix remaining ingredients, grind using the coarse disk and stuff into casings.
    Twist off into 3-4" links.
    Cook by sautéing in oil until well browned.

    Possums are attracted to food.
    Mostly trash left out, dog and cat food, bird feeders.
    I once found one in a 50 gallon trash can.
    How he got in there I don't know.
    Get rid of any food, they won't come back.

    They eat just about anything that is considered edible. Don't leave pet food outside where they can get to it.

    It could be a greasy grill, an empty cat or dog food bowl. A container with dog or cat food in it you have a lid on. They have a terrific sense of smell.
    Spill something on your deck, that night they might just come and inspect it.

    Leave an uncapped bottle of Clubman on the door step. Possum problem solved, but the neighbors will be upset.

    We've had possums come by on an occasional basis, it never became a real issue. I never had any problems with them. If it's something you want to eliminate, I'd suggest calling a pest control service and I expect they will be able to trap it and remove it. I don't know if they would relocate it or use a kill trap, I suppose it depends on your area and whether it's considered wildlife or a nuisance similar to a rat.

    Rescue an Opossum? I did know they were in need of being rescued. They are survivors, and will eat just about anything that will fit in their mouths. They dont even catch rabies. I can tell you that when animal control is called out on calls like this one, they roll their eyes, trap it, drive a mile down the road and let it loose again.
    The only issue @Sara-s has, is that it pooped on her porch. Other than the poop being left there, she probably wouldnt have known it had visited.
    My dog usually eliminates all Opussums, Squirrels, Rabbits, Raccoons, Moles, Rats, and careless Cats. She loves to eat the rabbits and squirrels. . So, critters aren't an issue at my place, only disposing of them is, sometimes.
