I use Burts bees natrual shower gel. I give it about a 6 out of 10 on not drying out of skin. The worst products I have used as far as drying out skin is the Axe products as of lately.
To the OP, did you ever try something new? How did it work? I'll add I think "glycerin" soaps dry my skin more than other real soaps, plus they don't last very long. Most of these soaps are made by adding glycerin, sugar, and alcohol to a normal soap base.
Similar problem during the winter for me... and I'm glad Every Man Jack is being mentioned because all their stuff has worked great for me, too. However, I'm currently using JASON aloe vera shower gel which I also recommend. But really I think they most important thing is to look at the ingredients and avoid products which contain sodium laurel/laureth sulfate. It's a cheap surfactant which can really dry out your skin.

Hahahaha I use the least manly body wash made. Caress Tahitian Renewal with pomegranate seed exfoliant. Yeah I got it from my girlfriend.
Hey, T.J., is it any less manly than a rose scented shave cream or a floral scented cologne? The idea of being able to try different soaps/scents/whatever I think is great. One of my favorite colognes is actually sold as either for men or women. The women's version comes in a "feminine" bottle with a bow on it while the men's comes in a simple rectangular bottle. The product inside is identical. So enjoy that pomegranate seed exfoliate!
I use AXE. The body spray smells funky, but the actual body soap smells great. I don't know why the same scent coming from different dispensers smell so different.
Good point has anyone seen the soap thats made from beer? I guess that would be considered the manliest. Im sticking with my pina colada smelling body wash though. Its like showering in Jamaica every morning.
