Wife just made one of our budget favorites: 4 cans of butter beans, 1 can of split pea/ham soup, a couple slices of ham cut up and 2 crumbled up charbroiled hamburger patties. Delicious and the kids love it; like chili, the longer it sits the better it tastes.
We're having a Tofurkey roast with baked brussels sprouts with pecans, homemade Mac & Cheese, and some sweet potatoes in quiche cups. Almost like a holiday meal.
Breafast: steel cut oats w/ butter, cream, cinnamon, Splenda. Cup of coffee. Lunch: same Dinner: four whole chickens and a Coke.

Tonight, a pour of Corner Creek bourbon. Having spent many years living just across the river from Louisville, Kentucky, I've gained a happy appreciation for bourbon.

For the meal, bell peppers and beef over rice (poor mans stir fry): bell peppers (green) beef (round steak.... or sausage or... chicken whatever. Adjust with your budget.) onions shitake mushrooms soy sauce white rice I don't have a decent camera so you'll have to imagine it.
BBQ steaks, long simmered spicy beans with bacon & molasses, baked potato with all the trimmings, lemon cake and mint chocolate chip ice cream for dessert.
