    I feel for you! My fiancee is celiac so we are all about gluten free. I am still learning how to cook and bake for celiac. Definitely a whole new world, especially eating out.

    Thai, Mexican, Indian, steakhouses and Vietnamese cuisines are your new friends. I've been at it a long time, it gets easy. I am familiar with Udi's they are HQ in Colorado, I have been to their facility. Celiac has been a blessing to me, it keeps my diet super squared away and eliminates a lot of really unhealthy options.
