I love my stove top pressure cooker and hardly ever use my slow cooker anymore. I think stove top ones are great. I'm with you on counter top space. I don't need more electric gadgets.
I've never used a stovetop one, that I recall. I don't keep my electric pressure cooker on the countertop when it's not in use. I like that the electric turns itself off when the timer runs down. Anything that's "set it and forget it" is good in my book, cuz I'm probably gonna forget it regardless.
I whipped up a batch of Hungarian Goulash tonight in the Instant Pot. It turned out great...........plenty for me, leftovers, and the freezer. I complimented it with a nice Pinot Noir and am getting ready to light up a 5 Vegas Classic cigar! Before After
Got mine at IKEA. Your timing is impeccable. My wife used it tonight to make beef stew. Cooks supper fast, tenderizes and keeps food juicer. Even read higher nutritional content in pressure cooked foods.
I have two stove top Prestos, a 4 qt. and a 6qt. They are over 30 yrs. old and still work like a charm. All I do is replace the gasket when it starts to dry out. Beef stew in 12 minutes, delicious. And no, the top never blew off on me either. Go for it.
IMHO, pressure cookers, crock pots, ice cream making machines, and bread making machines all have something in common: They are used more in the first month than they are used in the second year.
