"Almost Chili"

    OK, here is my chili recipe. I make a lot of this every year with whitetail and axis deer venison.


    “Almost Chili”…..(has beans if you want bulk)

    1lb. Meat-your choice (venison, beef, etc.)
    1 large sweet onion, chopped
    3 cloves garlic, crushed
    1 TBS chili powder
    1/4 tsp. salt
    1 tsp. cumin
    1 tsp. dried oregano
    1 tsp. cocoa
    1 tsp. Tobasco sauce (or red pepper sauce of your choice)
    1 14 ½ oz. can Hunt’s diced tomatoes w/green chiles
    ½ cup water
    1 16 oz. can of kidney beans if desired

    Cook meat, onion and garlic in 3-qt. sauce pan w/2 tbs. olive oil and drain.

    Stir in remaining ingredients except beans and heat to boiling. Reduce heat to low, cover, and simmer at least 1 hour. Stir occasionally.

    Stir in beans and heat to boiling. Reduce heat to low and simmer for 20 minutes. Stir occasionally.

    No cumin for me, thanks, but otherwise sounds really good. I may just have to try it.

    That not a lot of cumin for the amount of meat you are cooking. Are you somehow anti- cumin Rich?

    Yeah, I just don't like the taste of it.

    Looks quite good enough to eat. I make chili with Elk and use almost the same recipe with the exception of cocoa
