Baked fish/chicken

    Description:
    Easy recipe for crispy baked fish or chicken courtesy of my Step Mother Shirley

    Time: 30 minutes to an hour depending on the cut of meat.
    Difficulty: Easy
    Serving Size: N/A

    Ingredients:
    2/3 cup instant mashed potato flakes
    1/3 cup grated Parmesan cheese
    1 teasp. garlic salt
    1/3 cup margarine or butter (melted)

    Preparation:
    Heat oven to 375 degrees Grease or line with foil & grease baking pan
    In medium bowl (I use waxed paper to save from dirtying a bowl)--Combine
    potato flakes,Parmesan cheese, & garlic salt. mix well

    Instructions:
    Dip fish pieces into margarine & coat with potato flake mixture.
    Place in greased pan & bake.
    (Chicken takes about 45 to 60 minutes-------Fish depends on size
    probably 20 minutes.

    I would probably add some herbs to the coating mix like Chives and Parsley.
