I planted 4 Basil plants, in 15 gallon felt planters this spring, as an experiment. Well, this is the second time I had to trim them. They grew to 4 ft tall, and we cut them back to 1 foot. We can't give it away fast enough. Lucky for me, my mother taught me how to make Pesto. So, 1/2 of a pound of Toasted pine nuts, and a few ingredients later, we had 6 pints of some of the best pesto around. We only used half the basil, and gave the other half to a friend, so she could make some. Now I have 12 pints in deep freeze, and will probably not make any more this year, maybe. Oh, I got the wife to help, since she eats it more often than me. Between the Pesto and the homemade Marinara sauce, she is very happy.
Try making a BLT with pesto instead of mayo. You will not regret it. And don't forget the classic tomatoes and basil with a little olive oil and a pinch or two of salt.
