    Ken's Chicken Fajita Style Wraps

    Description:
A recipe of my own design. A quick meal that can be prepared in advanced and cooked in a short amount of time.

Time: 4-16 hours for Marinade, 7-15 minutes for cooking
    Difficulty: Easy
Serving Size: 2 Large Wraps or 4 Small Wraps

    Ingredients:
    -1 Large Boneless/Skinless Chicken Breast
    -Soy Sauce
    - Teriyaki Marinade
    - 2 Tablespoons 100% Maple Syrup OR Dark Brown Sugar (Optional)
    - 2 Tablespoons Orange Juice (Optional)
    - 1 Teaspoon Orange Zest (Optional)
    -Tortilla Wraps
    -Cheese
    -Any additions you desire

    Preparation:
    Marination Steps:

    1. Slice raw chicken into strips of about 1/4 inch thick.
    2. Place chicken into either zip lock bag or small Tupperware container.
    3. Add equal amounts soy sauce and teriyaki marinade in order to just cover chicken. Add additional marinade ingredients if desired.
    4. Squeeze out excess air (If using plastic bag) and place in the fridge for 4-16 hours depending on amount of chicken used and desired level of marinade penetration.

    Instructions:
    Cooking Steps:

    1. Heat either a frying pan over medium high heat or using an indoor grill type device. (George Foreman etc.)
    2. Drain excess marinade from your container.
    3. Remove chicken slices to your cooking vessel of choice. If using a frying pan use a wooden spoon or spatula to turn the chicken during the cooking process or you can manually toss. If using a press grill simply close the device.
    4. Depending on amount of chicken /your cooking vessel the chicken should be done in as little as 7 minutes and as much as 15. Chicken should be either at 160 Degrees F/71.1 Degrees C when checked with an instant read thermometer. If instant read thermometer is not available chicken should be firm and fully opaque when cut and any juice should be 100% clear.

    Assembly:

While your chicken is finishing on the cooktop, get your wraps out and wrap in tin foil and heat either in a microwave or at 300 Degrees in an oven for 5 minutes. Sprinkle desired cheese on the hot wraps to help with melting. Add other desired toppings, not limited to Hot Sauce, Sour Cream, Lettuce and the like. Place the freshly cooked chicken into the wrap and close. Allow to sit for 2 minutes for chicken to settle.

    Final words:

This recipe is great to prepare in the morning and to cook after work. The wraps can even be made a day in advance and served chilled in a picnic basket. If that is the case please prepare as above but refrain from full assembly until arrival at destination to prevent sogginess.
