Corn tortillas

    Corn Tortillas

    Ingredients

    1 c. Masa Harina flour
    3/4 c. Warm water
    1/4 tsp. Salt
    Extra masa flour to coat dough

    Equipment

    Mixing bowl & large spoon
    Measuring cup & measuring spoon
    Baker’s parchment
    Tortilla press
    Cast iron skillet or griddle
    Spatula
    Tortilla warmer
    Clean dish towel

    Directions

    Place dry ingredients into a mixing bowl. Slowly mix water in until the dough is smooth, but not sticky.

    Let dough rest for 30 minutes.

    Take a big spoonful of dough & roll it into a ball. This should be about the size of a golf ball.

    Dip in masa flour to lightly coat. This should help minimize sticking to parchment.

    Place in tortilla press, in between two sheets of parchment. Press.

    While preparing the dough, you can preheat the pan/griddle on medium to high heat.. (Do NOT use any oil or cooking spray.)

    Place tortilla on hot griddle, turning every 40-60 seconds. The tortilla should be just a little brown on each side. Cooking time will vary with your stove, skillet, etc.

    Put the dish towel in the tortilla warmer. Once tortillas are done, put them inside the towel & wrap it over them, to keep them moist.

    Yield; 8-9 small (5") tortillas

    If you want larger ones, divide the dough into 6 pieces.
