A recipe that's been in the family cookbook for many years. My great grandmother wrote it down in the family cookbook so my mother said. While I can't for sure claim it was her recipe, I know it's the one we've been using for a very long time. I was baking this at 1:00 AM this morning because I was craving it so bad. Yum yum! Fresh Apple Cake 1 cup vegetable oil 1 cup white sugar 1 cup brown sugar 3 eggs 1 teaspoon salt 2 teaspoons baking powder 1 teaspoon baking soda 2 ΒΌ cups plain flour 1 tablespoon vanilla extract 2 cups chopped pecans 3 cups of peeled, chopped golden delicious apples Preheat oven to 325. Beat oil and both sugars together. Then add the eggs, beating until creamy. In a separate bowl, mix salt, baking powder, baking soda, and flour together. Then add to creamed mixture. Stir in vanilla, nuts and apples. Pour into greased and floured bundt pan and bake for 55-65 minutes or until toothpick comes out clean. Allow to cool in pan 30 minutes. 1:00 AM results this morning:
Nuh uh. The only time "everyone" gets some is when they help peel, cut and chop all those darn apples! Took me an hour and a half just to get 3 cups of apples.
