German Christmas Cookies

    Another one of our kids favorites that they always request at Christmas.
    They are delicate and don't travel well, could be the butter. :D

    Ingredients:

    2 lb. flour
    3 eggs
    Juice of 1 lemon
    Rind of 1 lemon
    1 1/4 c. powdered sugar
    1/4 lb. almonds, blanched and ground
    1 lb. butter

    Directions:

    Cream butter and add sugar, almonds and lemon. Then add 1/2 beaten eggs and 1/2 flour and then again eggs and work in the rest of the flour. Let stand overnight and then cut slices off the mass and roll out and cut into shapes and bake at 350 degrees until slightly tan; about 8 minutes.

    now this problem with not travelling well. cookies need to travel from the plate to my mouth. will they make it okay?

    That has never been a problem, the 1,200 mile trip North sometimes turns them into crumbles though. :D

    1 pound of butter, how much do you pay your heart doctor cuz I think your rates just went up.
