Guinness® Corned Beef

    Description:
    Roast this Corned Beef slowly at a low setting for a melt in your mouth delight. The aroma is fantastic!

    Time: READY IN 2 Hrs 50 Min
    Difficulty: Even I can make it!
    Serving Size: 4-8 Servings

    Ingredients:
    4 pounds corned beef brisket
    1 cup brown sugar
    1 (12 fluid ounce) can or bottle Irish stout beer (e.g. Guinness®)

    Preparation:
    Preheat oven to 300 degrees F (150 degrees C).
    or
    Use a slow cooker - on low, all day.
    You may put vegetables in the roasting pan (or crock pot) as well. Try a wedge of cabbage, new potatoes, onion, carrots, etc. You may need to add a little more beer with your vegetables.

    Instructions:
    Rinse the beef completely and pat dry.
    1. Place the brisket on rack in a roasting pan or Dutch oven.
    2. Rub the brown sugar on the corned beef to coat entire beef, including the bottom.
    3. Pour the bottle of stout beer around, and gently over the beef to wet the sugar.
    4. Cover, and place in preheated oven. Bake for 2 1/2 hours. Allow to rest 5 minutes before slicing.

    Or our method - cooked in a slow cooker, on low, all day if you want it to be juicy and tender!! Make sure you buy Flat cut corned beef instead of Point cut too. We've made it a few times and the meat just falls apart.

    oh i did this for St. Patricks day. its my favorite meal for that holiday

    This is a great recipe, I have this on St. Paddy's day and man Steve is right this thing just falls apart and melts in your mouth :D
