Irish Soda Bread

    8oz Wheat Flour
    8oz Self Rising Flour
    10-14oz unsweetened plain yogurt
    1 tbsp. olive oil
    1 tbsp honey
    1 tsp baking soda
    1/2 tsp baking powder
    1 pinch of salt

    Grease and flour an 8" pan

    Sieve self rising flour with baking soda, baking powder and salt in a large bowl

    Add wheat flour to bowl, no need to sieve

    In a jug mix the yogurt, honey and olive oil then our onto flour mixture

    Stir with spoon until well mixed and a soft sticky dough is formed

    Flour surface and knead lightly(20 turns max) Form into a round shape

    Transfer to the floured cake tin and with a knife cut a cross across the top and place in the oven for 45 mins

    I use a similar receipe but add golden raisins, flatten the dough and make into scones. Yummy.

    I love a good homemade soda bread! :drool:
    Ideal when served with lamb stew, or simply with butter & honey…..

    We've had to find alternative recipes as for the past six years, we're a gluten-free household.

    Let's just say the people with "gluten allergies" that I know (which is a surprising amount of people considering only 1% of the population are diagnosed celiacs) - are very good at pointing it out :)

    Well, we do have a son with celiac so its not a lifestyle choice for us.

    Speaking of 'pointing it out,' hang around 'atheists,' vegans' and 'cross fit' people or 'cyclists' and you'll be reminded constantly of their choices….:D

    It probably took me longer to get out all the ingredients and measures them then it did to actually make
