Royal Chicken Bake

    Looking around Allrecipes.com for something different to do with some chicken I had planned for dinner this evening, a couple recipes grabbed my interest. In a spark of culinary genius, I decided to blend two recipes and add my own tweaks. THE best dang chicken I've ever cooked or ate.

    Royal Chicken Bake;

    4 Boneless Skinless Chicken Breasts
    2 cups of crushed Ritz Crackers (or saltine crackers)
    1/4 cup Brown Sugar
    1 teaspoon Garlic Powder
    1 teaspoon Italian Seasoning
    Pepper, to taste
    melted butter

    1. Preheat oven to 325 degrees F.

    2. Combine the dry ingredients in a bowl.

    3. Dip chicken in the melted butter, and then the crumb mixture.

    4. Place coated chicken pieces into a 9x13 inch baking dish. Drizzle with remaining butter.

    5. Bake uncovered, 1 to 1 1/4 hours, or until chicken is cooked through


    I used Ritz crackers this time, but think I'll try with saltines next time. The breading was a bit more sweet than I preferred this evening. Forgot Ritz have a bit of sweetness. Whereas saltines don't.
