When I took up the straight razor everyone told me that a 5/8 size was good to start with. I see some of the vets here who have different sized razors (mostly larger) and wonder what is the difference? Is the shave different? What makes them more or less difficult to handle? And while we're at it, what's the difference in full hollow, half hollow and other such designations? I'd love an education...

For the most part the nomenclature is fairly standard and you’ll get the idea - the grind describes the taper of the blade from the spine to the edge. Other charts show other variations as well so it isn’t all-inclusive. https://bespokeunit.com/shaving/straight-razor/designs/ As to the size, I find it’s simply personal preference that for me changes day to day. They each have a different feel and size is just one variable. In general, the larger blades have a little more heft behind them as you make your stroke but the smaller blades are easier to maneuver. It sounds trite but the larger blades also hold more lather and don’t need to be rinsed off as often. Hope that helps
11/16th to 6/8 seems to be a good size to start with. Don't go out and get the biggest you can, when starting. They don't shave any better, and cost much more, the larger you go.
