True, but I just finished a batch of my wife's Dragon's Breath Chili - 3 habaneros, 2 jalapenos, a few anaheims, hot sausage... mmmmm!!!
For a quick snack, I have made bacon wrapped tater tots and apricot zingers (dried apricot, slice of pickled jalpeno, wrapped in bacon and brushed with bbq mid way through) both with great results. This time I am going to do pork burnt ends. I have a boneless pork shoulder that I am going to slice into strips and smoke. Once it hits 170f, I will cube it, into a pan with some sauce, and back on the smoker until it hits about 200F.
We'll probably go with one of my artisan New York style pizzas. I have dough already made up and in the freezer. Easy to put together. I cook it on a pizza stone on the gas grill - comes out great every time. I'll probably have a bottle of scotch out as well.
I like the classics: pizza, wings, chips N dip, and stuffed jalapenos (a southern favorite). My family cookbook gas the absolute best stuffed peppers I gave had anywhere. If you are interested, I will give you the recipe.
Come on guys! It's only breakfast time here and I'm already craving chili! Chips and dip, along with some of my wife's excellent chili and I'm set. Oh, did I mention that I have a keg of my home brewed west coast american pale ale on tap? Mmmm.... good!
Stuffed Jalapenos Ingredients 1 pound bulk pork sausage 1 package (8 ounces) cream cheese, softened 1 cup (4 ounces) shredded Parmesan cheese 1 cup of shredded cheddar cheese 22 jalapenos halved and seeded Favorite Ranch dressing, optional Directions In a large skillet, cook the sausage over medium heat until no longer pink; drain. In a small bowl, combine the cream cheese, Parmesan cheese and cheddar; fold in sausage. Spoon about 1 tablespoonful into each jalapeno half. Place in two ungreased 13-in. x 9-in. baking dishes. Bake, uncovered, at 425° for 15-20 minutes or until filling is lightly browned and bubbly. Serve with ranch dressing if desired. Yield: 44 appetizers. Editor's Note: Wear disposable gloves when cutting hot peppers; the oils can burn skin. Avoid touching your face.

A pizza stone really helps. It draws moisture out of the dough and makes for a crispier crust - which I like.
The better ingredients you use, the better the taste yielded. I tried some wild boar once for the sausage and it was INCREDIBLE
I've done a similar recipe, but instead of slicing in half and baking. I cut off the top and use a corer to clean out the seeds. Then I stuff them and put them on a rack and smoke them. Here's a stock Internet photo as a reference.
I live in Texas, where we like everything spicy. I make my wife use Serrano's or habaneros sometimes with the seeds left in. It gives options to those that don't like spicy (de-seeded jalapenos) and people like me (who have likely burned off all their taste buds, lol)
