Guys and gals I can’t even begin to tell you how good and healthy this is! It’s great for the cool weather we have coming this fall. I use a whole roasted chicken from Sam’s or Walmart. One can is plenty due to the amount of sodium it has. You can also use regular long grain rice instead of the soup to cut back on the sodium. I also use chicken broth instead of water. 1- whole roasted chicken 1- can condensed chicken and rice soup 1- 16oz jar salsa 2- cans chicken broth 2- cans pinto beans (rinsed) 2 - cans black beans (rinsed) 2- cans ro tel 12oz frozen corn 3-4 teaspoons cumin Anything else you might want to add- spices, cilantro, lime etc… Toppings: Crushed tortilla chips, shredded Mexican cheese, sour cream In a large sauce pan or Dutch oven combine the first eight ingredients. Cook over medium- high heat or until heated through.
