Currently have a Gillette tech heavy. Thinking about getting an Above the Tie R2 open comb. When I change out my blade I'm always scared I'll slip and cut my finger. Is there anyway to open a 3 piece in a safer way?
I'm not sure I understand how your doing it exactly. I just hold my 3 pieces upside down and grip with 2 fingers the ends while I twist the handle with my other hand. Never had any issues cutting myself. Upside down feels safest to me for one reason or another.
There's also these things called twist-to-open razors that might suit you better, if the above advice doesn't help.
Just unscrew the handle from the head and base-plate. Then separate the base-plate from the head and remove the blade at the tabs.
Good suggestion ... TTO razors are definitely more user friendly. But they do have a different head profile than many three piece razors.
Derailed ... while holding the razor by the handle with the head danging below grab the head in a towel and unscrew the handle. then you can easily remove the bottom plate and then grab the blade by the tabs and let the top place slip away. Then promptly deposit the blade in your blade bank! I have actually cut myself on a blade while attempting to unscrew a handle that I had over tightened.

I wouldn't mind landing a MonoBilt, saw the one on ebay a few days ago go for way more then I was willing to bid though.
