Boxty and bacon of course. As Irish Mothers used to tell their little girls: Boxty on the griddle, boxty on the pan, If you can't bake boxty sure you'll never get a man.
Tonight's dinner: the last of the Winemakers series of dinners for the season. Great wine - great food. Especially the Syrah - I bought a number of bottles. These once a month dinners will start up again in the Fall. Attending these dinners forces me to prove that I can still function in a social environment. At least that is what I think - maybe others don't think so - but then I don't care what others think. It did force me to shave today. I don't normally shave of Tuesdays - so I got an extra bonus.
Mexican pizza prepared in advance by my lovely bride this morning. All I have to do is pop it in the oven at 350 for 20 minutes.
Made pizzaiola tonight - wonderful. Simple Italian recipe - great for beef but can also be used with pork or chicken. Grew up with this dish.
Last night was date night(the first one in about a month). My lovely bride and I went to a local Italian restaurant that she was familiar with, but one I had never been to. She had scallops in some kind of cream sauce and I had shrimp fra diavolo. Delicious. Killed a bottle of wine and a great time was had by all.
Today's Easter dinner: Stuffed cabbage, cabbage and noodles, ham steak, kielbasa, potato salad and macaroni salad
Cut down a rib roast into a couple of nice steaks. With grilled potatoes and steamed broccoli. It was tasty, but the best part is that I boned and froze a small rack of beef back ribs and 2 steaks so i get to do it again.
Went out for Easter dinner. Sliced duck breast in red wine reduction over a little pile of gnocchi. The gnocchi were a little heavy but the duck was fantastic.
That's what we let him think. We actually fed him false information to bring back to the polar bear high command.
