1 small head of green cabbage, chopped 1 package smoked ring sausage, chopped small 1 can of butter beans, not drained 3 tbsp butter 4 cups water Boil all for 20 minutes in cast iron dutch oven. Add salt, pepper, onion flakes and garlic flakes, then simmer for 30. Just tried to bowl and it was pretty good. Should taste better tomorrow after everything has melded together. Feeds four people for around four or five bucks. Some small red potatoes mixed in would be nice but I have to swear off those because of oxalates.
Hmm... I have to look them up and see how they rate on what I'm avoiding. 30 minutes later and I has a second bowl, it was indeed even better. The cabbage and butter beans blend very well together.
I loves me some butter beans. Even if you call them Lima beans, they are still butter beans to me. Parsnips will impart a sort of citrus whang, which is good for me!
