I make mine via bread machine. Lately I've been using Spelt flour. A little pricey but really yummy and satisfying. Normally I grind my own wheat and use that.
A lot of folks stay away from bread for various reasons. I treat myself and my wife to one loaf of homemade, organic, non GMO, mostly sourdough per week. Processed carbs, such as crackers, chips, etc., are avoided.
I made this one the other day. First bread that I've made in about a year. This time I used actual bread flour although I usually use APF. I also used red star yeast because in my experience fleischmann's doesn't give good results. I think I didn't let it rise enough because the crumb was very dense but it was tasty. However, I did not like the taste of the egg wash. So, I would skip that next time if I do this recipe again.
