Cooking with cast iron

    I think I now want berry pancakes tomorrow. I think I have some frozen blueberries in the freezer. Maybe I will even cook them in cast iron so as to keep with this thread.

    So jealous. The only place we’ve had huckleberries is in Montana. Even better than huckleberry pancakes is huckleberry ice cream!

    Oh it gets better

    My neighbor down the road sees my Huck Pancake post on FB and says "I have a nice griddle, it is on the electric box, pick it up when you come down the road"

    22"x10" super Heavy duty
    8x stamped on the bottom
    Have just a little more cleaning to do with some steel wool then re-seasoning time
    Anyone have any info about it ???

    Well I attempted ham steaks and scrambled egg whites this morning outdoors on the flat side of my Lodge cast iron griddle straddled across my propane burner - like I did grilling ribeyes in my previous post.

    Obviously the ham was easy to do, but the eggs burned and stuck. Ended up having to do another batch of eggs inside, in the Sam's Club commercial non-stick skillet on the gas stove.

    Eggs are the Kryptonite of cast iron or maybe it's the other way around. :(

    Ruined eggs suck!

    I scramble eggs in my carbon steel all the time. Of course it is on med low on a glasstop stove.

    I would use my Lodge griddle out on the grill. I finally decided to convert my grill to a carbon steel flattop. Here's a picture of my Lodge setting on the carbon steel plate for a size comparison.

    My daughter has been eyeing the old Lodge 12" skillet for awhile. I gave it to her. The Smithey I replaced it with just arrived. It sure is pretty.

    The new Smithey got a hot bath and an hour in a 450° oven with a thin coat of BuzzyWaxx. Put it to work this morning making sausage and eggs. Perfect. The sausage links rolled around the pan with no issues and a nudge from the spatula would slide the eggs.

    Chicken fajitas for dinner tonight, delicious.

    The skillet could have been wiped clean with a paper towel after each meal, but that's not me. It got washed after each use.

    Ribeyes, sous vide to sear. It did take a quick scrub with a nylon brush to free up some stuck bits.
    Also a picture after four uses. Not really a good representation the way the light reflects off of it.
