Mmmm...I'm getting hungry reading this thread. I'm going to need to fire up the Weber bullet and make some chicken and ribs.
I'm only an expert at eating the stuff not cooking it lol, in Montreal they use those special spices along with the smoking and then steam the meat in a certain way just before serving. The smoker must cook the stuff and their steaming process really seems to rejuvenate the flavor cuz it's heaven in a sandwich. As far as I know, they steam the meat in big chunks then take it out of the steamer and go to cutting it which I'm told is an art in itself. And then there's the mustard..and those fries..geez now I'm starting to feel hungry..
