    It was mostly crispy. If I would not have basted it with butter, it would have been more so.

    I got up every 4 hrs to check the heat, and wood. Not too bad, but still a PITA. In the end, it is worth it.

    I thought you had to feed an offset every 20-25 minutes?

    Not if the vents and wood type are all dialed in. I can keep it between 175-210°f, untouched, for approx 4 hrs. All i have to do is toss a chunk or two of wood on it every once and a while.
